Kilchoman Sauternes Single Cask Finish 2022

Kilchoman Distillery sits nestled amongst the traditional farm buildings of Rockside Farm on the north-west coast of Islay, sheltered beneath the Creag Mhor Headland. Famous as Islay's Farm Distillery, the distillery's barley fields stretch west to the shores of Machir Bay and the Atlantic Ocean. Kilchoman is unique in many ways, most notably for their 100% Islay range, Scotland's only single malt produced from barley both grown and malted on Islay. Estalished in 2005, Kilchoman is true to the island's rich farm distilling heritage, using local peat cut in the traditional way, slowly distilling by hand, maturing in traditional dunnage ware houses and bottling on site without coloring or chill-filtration. 

Kilchoman Sauternes Single Cask Finish is a limited edition Scotch whisky that was matured in a bourbon barrel for over eight years before being finished in a Sauternes cask for one year. Sauternes is a French dessert wine known for its rich, sweet flavor with notes of figs, chocolate and grapes. The whisky has a natural color and its non-chill filtered. It comes in a very nice red and gold gift box.

Elegant nose and dry peat smoke balance with malty richness. Palate bursts with vanilla, caramel and buttery notes. Nutty influences from the Sauternes cask immediately followed by apricot and honey. Subtle hints of Islay pear smoke linger. Smoky sweet BBQ finish remains on the palate, gaining momentum as its left to sit. Fresh fruit remains throughout.
