Bodega Valdespino is one of the oldest bodegas in Jérez, originating in 1264, when King Alfonso X gave Don Alfonso Valdespino the gift of land in the City of Jérez.  In 1999, Valdespino was bought by Grupo Estévez who were able to fund and maintain the traditional methods for which Valdespino is famous. Valdespino Sherries remain among the very best quality available, and Inocente is still one the best Fino in the market, as well as being the only Sherry to be produced from the grapes of a single vineyard. 

Oloroso is a wine made from Palomino grapes. The special structure that it demonstrates at an initial tasting destines it for oxidative ageing. For this reason alcohol is added to 17°, thus preventing the development of the layer of yeast and allowing the wine to age while exposed to oxygen. The result is a wine both structured and complex. 

Toasted notes up front, as well as bags of dried fruits (figs, dates, raisins) and burnt sugar. Freshly baked vanilla cake. Hazelnut syrup and toffee. It shows a slightly ethereal side of polished oak and cinnamon. With a hint of cocoa dust on the finish.
